So it’s Monday which means I get to decide what tasty food were eating this week. The shopping list is quite small since I already have most of the ingredients on hand :)

Basics: Greek yogurt. Cottage cheese.
Monday: creamy barley salad
Tuesday: Cuban black beans and rice
Wednesday: curries eggplant
Thursday: zucchini with quinoa stuffing
Friday: sweet potato lentil soup
