Meal planning Monday!!!

So it’s Monday which means I get to decide what tasty food were eating this week. The shopping list is quite small since I already have most of the ingredients on hand :)

Celery. Apples. Bell peppers. Radishes. Cherry tomatoes. 2 Eggplants. Zucchini. Salad. Tinned (or frozen) green beans. Sweet potatoes. Onion.

Snacks: carrots. Broccoli. Mushrooms. Apples. Fruit.

Basics: Greek yogurt. Cottage cheese.

Monday: creamy barley salad

Tuesday: Cuban black beans and rice

Wednesday: curries eggplant

Thursday: zucchini with quinoa stuffing

Friday: sweet potato lentil soup

Yummy things coming up this week!
