So tonight I decided to make the husband happy…and healthy ๐Ÿ˜‰ I’m a very sneaky wife mwahahah! All vegetables tonight!

Instead of steak I marinated portobello mushrooms in Worcestershire sauce all day and then grilled them.

For the mashed potatoes I took frozen cauliflower and microwaved it for 7 minutes (til thawed) drained te water and put it in my food processor with some italian herbs! Voila! Faux mashed potatoes that would fool any child or husband (but I think some cheese would be a really good tasty add in if you’re feeding kiddos).

Instead if classic frozen chips I chopped up a sweet potato, steamed them for 25 minutes along with the broccoli (and 6 eggs for lunches this week). Then I sautรฉed them in some leftover Worcestershire sauce in a nonstick pan with no extra oil to crispy them up.

Yummy yummy! I think I could feed this to my little 10 year old brother and even he would like it. Massive thumbs up from the hubby tonight ๐Ÿ™‚

So this week I sprained my ankle which has meant lots of sitting around on my butt with my leg elevated and wrapped in ice packs…not fun…and very boring..so I’ve had to make my meals exciting! And they also had to be easy because standing on one leg in the kitchen does not last very long ๐Ÿ˜‰

So I started out with some tinned corn (so easy) and frozenย peppers(no chopping!) and some fajita seasoning. I sautรฉed them for a bit til they got a bit crispy. I added in 1/2 tin kidney beans and 1 tablespoon salsa. I added a few chili flakes for an extra kick. I let that all warm up together then popped it in a plate. I used the same pan to fry an egg and then put that ontop of the beans. Iadded a dollop of Greek yogurt(instead of sour cream) and some salsa. I also got a piece of 100% rye toast to dip in the egg yolk ๐Ÿ™‚

This was such an amazing lunch. Full of my favourite things and absolutely so easy and delicious!

For dinner I made something equally as healthy, easy and tasty. Frozen stir fry mix, frozen green beans and a frozen fillet of haddock. Toss it all in a pan and stir! This was incredible. Veggies and fish are basically the best meal you can make. And within 10 minutes!

Yesterday I had no clue what to make and had a bit of a time constraint due to a “running-date” with a friend of mine ๐Ÿ™‚

So I walked around the shop looking for veggies that looked yummy. I came across a giant Swede only costing ยฃ.75!!! Not having any idea what it was or how to cook it, I decided I was gonna make it into dinner!

So I found a recipe on BBC Good Food for Honey Roasted Swedewith chili and coriander. I thought it could use some bulking up so I added chickpeas to the mix. But if you’re a meat- fan this would probably go great with pork! I chopped it up, threw it in a roasting pan and let it cook while I was on my run (andy was babysitting it while I was out). It was ready by the time I was back. Really tasty, really good for you, plenty filling but I accidentally didn’t de-seed the chili and it was VERY SPICY! Andy didn’t mind a bit though ๐Ÿ™‚ for added protein (and to cool the spice a bit) we served it with chive&onion cottage cheese. I also put some sprouts with it cuz they were on offer, lol. Tasty! Had leftovers for dinner tonight ๐Ÿ™‚

1/2 swede peeled and chopped

Chili de-seeded and shopped
Small bunch of coriander
Cumin
Pop everything in a pan, roast for 45-50 minutes at 200C ๐Ÿ™‚

If you add the chickpeas (ยฃ.33) cottage cheese(ยฃ.60) and chili/coriander (previous meal leftovers-FREE!)into the price then this whole meal cost ยฃ1.68 for two portions and the lasted us two meals!

The foodies are back in action! Quick and easy is the name of the game!

So these last few weeks have been a bit bizarre as far as food goes. Immediately after writing the last post I got a bad case of the stomach flu for a few days, quickly followed by Andy having the stomach flu for the next week. So we basically ate toast and bananas for 10 days straight! Then we moved back up North into Scotland only to go stay with the in laws and have some mummy love which included wonderful meals ๐Ÿ™‚

SO we’re finally into our own flat making our own yummy meals and figuring out where is the best/cheapest/easiest places for us to shop in our area. Here’s some ideas for meals that we more or less “threw together”

One of our standbys is grilled fish and sweet potatoes! We get the cheapest packs of frozen fish from Aldi and just keep them in the freezer for when we’re pressed for time. Andy headed up the sweet potato/carrot mash by steaming the veg and adding some cinnamon! The peas were tins that we were trying to use up before the move ๐Ÿ™‚

Another thing that is a “standby” meal that we LOVE is fritattas! Mix up some eggs, add whatever seasonings and veggies you want to include (we love our veggies) and then put it in a pan on the hob. We pop it under the grill for a few minutes to add a bit of crispiness. We usually have it with sweet potato chips to add some “bulk”. Sweet potato chips are the easiest thing in the WORLD! You just chop them up into whatever shape you want and put them onto the grill for 5-10 minutes one side and then flip them. We top them with various sauces but if you like good ‘ol salt & Vinegar then you can toss them in Olive Oil and some salt just before putting them on the grill. We also love having carrot salads, so filling and super simple…anybody have a cheese grader? That’s it! Balsamic vinegar and you’re good to go ๐Ÿ™‚ These are super simple recipes for when you’re short on time/ingredients and just want something that requires no brain work

So Andy is basically a genius and came up with the easiest yummiest meal EVER! We found tinned tomatoes w/ olives at Tesco and decided to buy a few (only 20P!!!) and just see what we would come up with. So This mixup has a few of those tins, some tomato purree, precooked frozen chicken, pearl barley, italian mixed herbs, and some minced garlic (from a jar). So no chopping or food prep involved, just dump and go in one pot! It is phenomenal, just the perfect thing to fill you up after a chilly day. The salad is our Hayes Carrot Special, graded carrots, chopped celery, and balsamic vinegar. We’re all about quick and easy in this house ๐Ÿ™‚

So the last recipe that I am going to share with you is my personal favorite. Out of all the recipes I know this one trumps all for time/ease/and tastiness. I tend to make it when we have friends coming over for dinner because it is so flexible time wise. It is my Quinoa Sweet Potato soup. I use a slow cooker to make it. Here are the ingredients

  • 2 tins kidney beans
  • 1 tin black beans (but I tend to use kidney beans)
  • 2 sweet potatoes chopped
  • 1 chopped onion
  • 1/2 C. uncooked quinoa
  • 2 tins chopped tomatoes
  • 1 Tablespoon Chili powder
  • 1 teaspoon jarred minced garlic
  • 1/4 teaspoon dried red pepper flakes

I usually prepare the soup the night before by putting the quinoa, and seasonings in the empty slow cooker, opening the tins and putting them into a tupperware with the garlic then all I have to do in the morning is chop, dump, flick it on, and go! It is AMAZING! You can add chicken if you like but I think it is plenty filling without it. Best meal for guests, just the right amount of spice and there’s always leftovers to freeze for another night ๐Ÿ™‚

Last night I tried out a great bread recipe to go with this VERY easy soup. It’s called airy fairy easy peasy soda bread. I got the recipe off of a blog agirlcalledjack written by a mum living below the bread line and still cooking healthy for her son. Awesome blog! So to make this bread you can click on the link or follow these EASY instructions.

  • Preheat oven to 180C. Measure out 200 ml. of milk and add 2 Tablespoons of lemon juice and set aside to sour. Measure out 200g of self rising flour and mix together 1 tsp bicarbonate of soda. GENTLY mix in the milk until doughy texture. Tip onto a floured surface and form into a loaf shape, pop into a loaf pan, 3 slices along the top (it’s ok if it’s still a big floury just so you don’t overwork it). Pop it in the oven for 40 minutes and BOOM YOU’RE DONE!!!

Yes it is that easy. These two recipes make having guests over for a healthy, filling, tasty meal SO SIMPLE! Which is what I’m all about. And the food was a hit!

So I am a massive fan of snacking! It keeps my energy high all day, keeps me from gorging myself during main meals when I’m starving but most of all it keeps me happy! I love eating and if I can do it 6 times a day with 6 different foods even better!

Here is a rundown of my meal habits and how I keep my body fuelled and happy ๐Ÿ™‚

6:30am breakfast in bed with the husband. 1/2 cup oatmeal (with ground flax seed, cinnamon, Greek yogurt, goji berries, and berries)

9am start my morning snack which is usually a bag full of chopped veggies. I eat these during work a few bites at a time.

11:30/12 lunch! Leftovers from dinner the night before OR popcorn OR beans, tuna, sweet corn, mustard

2pm light afternoon snack before my workout. Usually a few spoons of Greek yogurt and fruit. Sometimes a small bowl of granola, fruit, nuts, and seeds depending on how hungry I am after lunch and depending on my workout or theday.

4pm post workout snack; usually a chocolate protein shake and fruit

6pm DINNER! Always tasty and loaded with veggies.

I usually don’t eat after dinner. I will have tea or if I’m watching a film or feeling a bit hungry then ill have a bit of air popped popcorn (a super-food snack idea).

So that is my baseline for most weekdays. It changes when I’m not working or on weekends. I thought I would share a few of my bigger snack ideas I usually have on days off work when I don’t eat as regularly and find myself a bit more hungry.

Sweet potatoes, eggs, and porridge!!! Three of natures best foods. Yesterday I had breakfast at 11 and didn’t feel hungry for lunch so about 2pm I had sweet potato chips and a fried egg. Sometimes ill have a baked sweet potto with Greek yogurt, cinnamon, and walnuts and other days ill have a few scrambled eggs and some sautรฉed veggies.

One of my favorites and old standbys is either greek yogurt or cottage cheese, ground flax seed, and some frozen fruit. Eaten right out of the tub, it really doesnt get any easier or tastier than this.
So my snacks and meals do tend to vary but it is always clean, healthy and very tasty!

So this week is a very good example of why I plan out meals but also stay flexible.

So on Monday we had creamy barley salad and OH MY GOODNESS! SO GOOD!!! Going in the cook book ๐Ÿ˜‰

I even had enough left over for my lunch the next day. The sauce was so tangy and crisp. I did have to make sure my man had enough to fill him up so I added some seedy bread on the side ๐Ÿ™‚

Tuesday Andy made dinner so that moved my schedule for the week around a little bit. Which is why it is important to STAY FLEXIBLE! You can keep healthy by planning meals out but if you’re so stressed out about it then that is not a very healthy lifestyle and definitely not sustainable. So tuesday’s meal of Cuban Beans and rice got moved to Wednesday which was fine. The Cuban beans were awesome. We have a hard time finding black beans in the UK so I have realized that kidney beans make a great substitute.

Thursday we had some curried eggplant which was pretty good. I made it a bit too spicy (not too sure of how intense cayenne powder is…) but that means Andy loved it! I guess it went down well because there was not enough left over for my lunch the next day ๐Ÿ™‚ So I grabbed some leftover veggies and salad (from Monday’s dinner) and added some salmon, cottage cheese, and walnuts. AWESOME SALAD! No need for dressing, there’s plenty of goodness and flavor in there just on it’s own. Keep your mind open to various dressings, Ranch is not where it stops ๐Ÿ˜‰ This salad also is packed full of protein ๐Ÿ˜›

Friday was meant to be stuffed zucchini but we had quite a few veggies leftover from previous meals and I just couldn’t be bothered following a recipe. So I made a stir fry! I started with sautรฉing onions and garlic in toasted sesame oil and toasted a few tablespoons of sesame seeds. Then I started chopping carrots, peppers, zucchinis, and threw in some frozen peas. I boiled a pot of rice and voila’ ! Yummy stir fry that the guys loved ๐Ÿ™‚ Wonderful collection of color and flavor.ย Awesome easy standby meal to use up leftover veggies.

So tomorrow we are heading out on an overnight trip, yay fun! But it has the potential to make eating healthy a bit tricky so were going out prepared ๐Ÿ™‚

So after Andy and I went out for an evening run we set to work! We’ve cut up carrots, celery, cucumber, mushrooms, and broccoli for munchy snacks and then also filled a ziplock with dried fruit and nuts. Then I decided to go a bit cray-cray and make a few travel treats to keep us full during two full days of walking.

COOKIES!
I make the most wonderful banana-oatmeal cookies! I got the recipe from Blogilates where I get a lot of my recipes from. Here’s the recipe: 1 banana…1 cup of oats. THAT’S IT! Mash them together, put on a cookie sheet and you have delicious sweet cookies. I added some flax seed, cinnamon, and goji berries to mine. You can put all sorts of add ins into them ๐Ÿ™‚

So I decided to make granola bars and they were an absolute hit with the husband. Super easy, lots of flavour, and they have chocolate! They have things like banana, oats, coconut, cinnamon, and other tasty things. Lets just say that I couldn’t even get a photo before Andy dove right into them ๐Ÿ™‚ I have to wrap them up quick before any more disappear ๐Ÿ˜‰

Yummy yummy travel food! We also have some sandwiches and fruit that were taking along with us for lunches on the journey. Cheap, easy, healthy and most important- TASTY!
